Homemade Brownie Mix

I love brownies. There is just something about a soft, chocolaty treat that makes the world right. But, I hate store bought brownie mix, they just never truly capture what I think a brownie should be. So I decided to get off my lazy rear and come up with a homemade brownie mix that rocked, and I think have. And I would bet money, you already have all the ingredients!

Ingredients:
1 cup  sugar
1/2 cup flour
1/3 cup cocoa powder
1/4 tsp baking powder
1/4 tsp salt
2 eggs
1 tsp vanilla
1/2 cup veggie oil

Directions:
I use my stand mixer (because I have become incredibly lazy since I got it) to whip the batter up in seconds. Simply throw everything in and give it a good mix. You can easily do this by hand too. Once the batter is mixed, pour it into a greased 9×9 baking pan and bake at 350 degrees for 20 minutes. If you like a thicker brownie, you can double the recipe, but you will have to cook it longer, around 35 minutes.

Now you want to know the really awesome part of this killer brownie mix? You can make it up ahead of time, just like the box mixes you buy in the grocery store! Simply buy your ingredients in bulk, grab a permanent marker and some zip-lock bags!

Write the wet ingredients (which you add in at the actual time of baking) and direction on each of your bags and then in an assembly line fashion, fill them. Make sure you mark the date you put them in the bag as well. These mixes have a shelf life of around 6 months! How totally awesome is that?!?!

So how good are these brownies? Let me put it to yo this way…. When I make brownies I make two batches in two 9×9 in pans and they are ALL gone in less then 24 hours! There are only four of us and I don’t eat that many, so you can tell just how much my hubby and kids LOVE these super easy to make brownies. Now can you see why I make my mix up ahead of time?
