Avocado and Hummus Taquitos

Ever get in a food rut? You know, the same five dinners always showing up on your table? We got into one of those ruts a while back and decided to branch out, be brave, and take our taste buds on a culinary journey.

Now I know when you read the title of this recipe you either went “dang that sounds good!” or “She can’t be serious!” But here I am, serious as can be. Avocado and hummus taquitos are tortillas with hummus, sliced avocado, and shredded cheese rolled up into tubes, and baked until crunchy. They are simple to make, use few ingredients, and even my skeptical children agreed, these are the bomb! Not to mention, they are quit filling little things!

Start by preheat your oven to 400 degrees Fahrenheit. Prep you pan by spray a large baking sheet with cooking spray. Now it’s time to get your simple ingredients ready and assemble your taquitos!

Ingredients
3-4 medium avocados
14 (6 inch) flour tortillas
Plain hummus
Shredded pepper jack cheese
Olive oil

Prepare your ripe avocados by cutting them in half and remove the seeds. You can whack the seed with your knife blade and twist to remove it. Use a large spoon to scoop the avocado out of itโ€™s skin. It is like a magic trick (if you have never done it before.) You simple wiggle your spoon in by the skin, twist it around, and plop, out comes your avocado! Slice the avocado into thin pieces while you warm the tortillas in a microwave for about 10 seconds to make them more pliable and easy to roll.

Assembling the taquitos is easy and the amounts of each item depends on your taste. Love hummus? Slap a big spoonful down. Crave avocado? Stack in as many pieces as you think the wrap will hold! Are you a cheese lover? Then shred a little extra cheese on each one!

Try to start your hummus nearer to one end, rather then in the middle of your tortilla. Spread the hummus into an even strip the length of your tortilla. Next lay on your avocado slices and sprinkle with shredded cheese. Tightly roll the tortilla around the filling, starting at the edge closest to the filling. Place the taquito on the baking sheet, seam side down.

Lightly brush the tops of the taquitos with the olive oil before setting them to bake for around 15 minutes. They will turn golden brown and be crisp when done. Let the taquitos rest for 5 to 10 minutes before serving them, as they come out of the oven super hot and the avocado might slip out of the taquito because of the super hot cheese. Be patient, set the table or something, but trust me on this….let them cool a little. No one needs a burnt mouth!

These are delicious plain, but can be serves with either a simple store taco sauce or you can add a little hot sauce to some sour cream for dipping. These not only make a great dinner, but would be awesome appetizers at parties as a vegetarian option for guest!
