It’s never too cold for Ice Cream Pie!!

I know your about to say I am nuts for writing about ice cream the last week of October, but take it from a girl who lives in Michigan, where winters dip below zero….. ice cream pie is great anytime of the year. It is easy to make and will leave your family and friends singing your amazing talents!!!

So how does one make ice cream pie? Well I use a homemade graham cracker pie crust. I guess you could buy one, but these are so easy to make, why would you want to! Simply run about 12 graham crackers through your food processor (or you could just beat them to death in a bag with a rolling pin), mix it with 1/4 cup sugar and 1/3 cup melted butter. Press the mix into a pie pan and back at 375 for around 10 minutes.

Once the crust is out and cooled it is time to mix up your filling. Grab 2 pints of vanilla ice cream and let it set out to soften a bit. While the ice cream is softening, grab yourself some candy… I used a king size pack of Butter Fingers and a king size pack of Reese’s Peanut Butter Cups (or you could just steal some of your kid’s Halloween candy!)…. grab a knife and chop them up. You can make the pieces as big or small as you like. You can also chop up some nuts at this time too. Pecans or walnuts work great. Now dump your ice cream and candy into a bowl and mix them together. Spoon the ice cream into the pie crust and sprinkle the nuts over the top. Now pop that baby back in the freezer to set up.

Once ours had set up I took it out and let it sit for a couple minutes, cut it, and put it back in the freezer all wrapped up so that when it was time to serve it was easy peasy. If you want to take it a step further you can drizzle carmel or chocolate on each piece. So are you drooling yet? I told you ice cream was for anytime…. especially when it is pie!
