Homemade Frozen Hashbrowns

Weather you have a bumper crop of spuds and you’re looking for a way to preserve them…. or you’re just a “do it yourself” kind of person, here is an easy way to make your own homemade frozen hashbrowns! Why buy those overpriced bags in the frozen food section, when you can quickly whip up your own!

Your first step is to get some potatoes. I use russets as they are a good for just about anything kind of tater. But, of course, feel free to use which every kind you like. Now for the fun part, (note my sarcasm) get peeling.

Once you’re all peeled and rinsed off, grab your cheese grater, or if your fancy, your food processor thing-a-ma-gigy and shred your taters. Now don’t get me wrong, I would love to be fancy, but alas it is the cheese grater for me. Here is a little tip for all you cheese grater folks…. When you get to the nubby part of the tater, stick a fork in it. Using the fork is a good way to not loose a knuckle!

As you’re shredding your tater, put it in a bowl of cold water. This helps keep it pretty. Let’s face it, no one wants to eat a brown ugly taters. Once you have all your taters shredded, you’re going to drain the cold water and throw them into a pot of boiling water to blanch for around 3 minutes. Once your shredded taters are blanched, drain them, run them under cool water and place them on some paper towel to finish dripping dry. For the environmentalists out there, relax, paper towel can be put in your compost pile!

Once they are drier, you can portion them out to freeze. I put ours in zip lock bags (that we can reuse) in portion sizes for breakfasts. These shredded hashbrowns are also great for casseroles too!

So what are you waiting for? Get peeling! And as your hand starts to cramp (remember I dislike peeling taters), think of how much healthier they will be then store bought. Think of the money you will save doing it yourself. Think of the prep time you will save on those early morning breakfasts. Gee, I guess it kind of makes the peeling part worth it, doesn’t it!

  1. I can not wait to do this with the sack of extra potatoes we were recently given. We love hashbrowns in this family, almost as much as we love bacon so home made ones would make queen of the world in their eyes.

  2. I have done them before fresh and they are amazing!! I haven't done them before to freeze but perfect to stock the freezer because we love shredded hash browns. I didn't know blanching them would keep them good so they don't get yucky in the freezer. Thanks for the tip.

    Do you think it would work if I chunked them up Potatoes O'Brien style and just parboiled a little longer?
