Oatmeal Chocolate Banana Bites

Every morning when I ask the littlest country kid what he wants for breakfast, he always exclaims with glee, “Cookie!!!!” Seriously!?!? Cookies are not for breakfast…… or are they? I have come up with a simple to make “cookie” for breakfast that packs nutrition with a hint of naughtiness, Oatmeal Chocolate Banana Bites. These things are so super yummy! They have more of a muffin like consistence, but if I say “cookie” then my littlest is happy. And having happy kids is what I am all about. So I’ll call it anything you want little guy…… anything you want! As long as you eat it.

So what goes into these yummy bites? Things I just happened to have around the kitchen. I was cleaning up one morning and came across two very “mature” bananas. Not wanting to waste them and not in the mood to whip up banana bread, I decided to experiment with making a “cookie” that would satisfy my responsibility as a parent and meet the needs of my cookie loving kid.

Ingredients
  • 2 ripe bananas
  • 1 cup of “quick” oats
  • 1/2 cup of chocolate chips
  • 1 Tablespoon of peanut butter

In a bowl, mash the bananas, throw in the oats, drop in the peanut butter and mix it all together. When it is all combined, added in your chocolate chips.

 

 

The dough is tacky to the touch, but be brave, get in there and form it into balls. I got about 15 balls out of mine that are perfect pop in your mouth size for adults and about two bites for a child. After placing the balls on an ungreased baking sheet, I popped them in the over at 350 degrees for 15 minutes.

 

 

So were they a hit? Let’s just say I now have a special stash of bananas ripening so that I can full fill the demand created by their creation! So I would have to go with, yes! These Oatmeal Chocolate Banana Bites were indeed a hit!
