30 Minute Mozzarella Stuffed Meatballs

In my quest to cook more, I have found I just don’t have the tie to make elaborate meals. I mean who am I kidding, I have a lot to do and I’m sure you do too. That is why this 30 Minute Mozzarella Stuffed Meatballs recipe is so great. It is easy peasy to whip up, taste great, and really fills your belly.

I was a little worried that the country kids were going to turn their noses up at having just meatballs for dinner, but that was far from the case. In fact, the oldest country kid turned his meal, which included some bread into a meatball sandwich! He even asked for more meatballs. You could also boil up some spaghetti to go with it if you fell so inclined.

This recipe only takes one pot! Well, and a mixing bowl, but that’s not too bad when it comes to having to clean up!

Start by mixing up 2 pounds of ground beef in a bowl with the following:

  • 2 eggs
  • 1/2 cup of bread crumbs
  • 2 tablespoons Worcestershire
  • 2 teaspoons garlic powder
  • 1 1/2 teaspoons oregano
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

This makes enough meatballs four a family of four with leftovers, so you could easily cut the recipe in half if you’re making it for two people. Or you can freeze the meatballs for another dinner in the future.

Once your meatball mix is all combined, it is time to get the hidden surprise ready. Cut mozzarella into 1/2 inch cubes. This is the perfect size for tucking into your meatballs.

I use an ice cream scoop to form my meatballs. This helps to make them all the same size so that they cook evenly. Once I scoop the meat ball out, I simple place the mozzarella in the center then work the meat around it to make a nice tight ball.

Now it is time to get these bad boys browned up! Heat your pan over medium high heat. Make sure to spray your pan well with cooking spray and then put the meatballs in. Brown the meatballs all the way around. This will take about two minutes per side. When the meatballs are browned, drain the grease. I took mine out of the pan and put them on a paper plate and then dumped the grease before adding them back in,.

Now it is time to add in the marinara sauce. You could make your own, or buy it. I just bought a jar and poured it in because between homeschooling the oldest country kid, my hysterectomy and the littlest country kid starting preschool, we did very little canning this year.

Turn your temp down to medium low, cover your pan, and let the meatballs marinate in the sauce for 10 minutes. When the time is up, sprinkle shredded mozzarella over top and serve!
