Pumpkindoodle Cookies

They may look like snickerdoodles but trust me, they aren’t…. these Pumpkindoodle Cookies are so much more! These cookies are spongy and full of lovely pumpkin flavor. These are so yummy, they’re not just for the fall season, but good anytime!!!!
 
 
                           Ingredients
                           1/2 Cup softened butter                  1/2 Teaspoon Vanilla
                           3/4 Cup Sugar                               3/4 Teaspoon baking soda
                           1 Egg                                              1/2 Teaspoon salt
                           1/2 Cup of pumpkin puree               1/2 Teaspoon Nutmeg
                           2 Cups flour                                   1 Teaspoon cinnamon
                           1/2 Teaspoon ginger

Mix all the ingredients together (I start with the dry ingredients and then add in the wet ones.) The dough will be sticky so grab a spoon in order to form your cookies. In a small bowl, pour some sugar then drop in “balls” of dough off your spoon. Once the sugar coats the glob of dough it becomes easy to handle and shape. Place the sugar covered balls on a greased pan and squish (flatten) them a little with the palm of your hand. Back at 350 degrees for 10 minutes.

So how good are these cookies? Well if the rate of consumption by my country kids is any indicator, they are awesome. And get this, my neighbor who doesn’t like pumpkin… yeah I gave her one but didn’t  tell her what it was…. she liked it!!!! Guess who might just like pumpkin after all!?!?!

So why are you still sitting in front of your computer!?!?!? Get in the kitchen and start baking… I promise, your taste buds will thank you!!

  4. Thanks for the inspiration…I live off the end of Pumpkintown Road, how could I not try these? I doubled the recipe, substituted some whole wheat flour 1:4 ratio, and voila, incredible cookies!
