Homemade Banana Bread

Okay so you went to the store and bought a big bunch of bananas. Sadly they didn’t all get eaten and now you have a few turning, you know, getting those dark spots on the peel. WAIT!!!! Do NOT throw them out, they are just perfect for banana bread!

Honestly, I sometimes have to hid bananas so no one eats them, that way I get then to turn and they are just right for my bread. Sorry but green or yellow bananas just don’t cut it in my bread. You see the long the fruit ripens the better, stronger the taste.  So now that you have those “rotten” bananas, lets get baking!


2 cups flour
3/4 cups sugar
1 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1 egg (beaten)
2 bananas (mushed)
1/4 cup milk
1/3 cup melted butter
1 teaspoon vanilla

As you know I am not an organized baker. I don’t say cream this into that. I simply go down my list and throw it all in a bowl! Once it is all combined well, put it in a greased pan at 350 degrees for AROUND 50 minutes. I say around because every oven bakes different. The only way to make sure it’s done is the “toothpick test.” You know where you insert a toothpick in the center of the loaf and if it comes out clean, it’s done.

Also, you can add nuts to this bread. Use what ever kind you like and make sure they are well chopped. I prefer black walnut but since I was out, I just left them out. This bread makes a wonderful treat anytime, but my gang loves it still warm, fresh from the oven for breakfast.
