To put it mildly, my hubby is a cornbread fanatic. He enjoys, no, loves a good piece of cornbread. I have gone through many trials and errors trying to provide him with his “holy grail” of cornbread and finally I have come up with a recipe that fits the bill! Finally, a cornbread he canβt immediately find fault with. No more tinkering with the recipe every time I make it, what a relief!
Ingredients
- 2 cups fresh milled yellow cornmeal
- 2 teaspoons baking powder
- 1 teaspoon salt
- 3 tablespoons sugar
- 2 eggs
- 1 ΒΌ cup milk
- 6 tablespoons of butter
- 1 tablespoon lard
- ΒΌ cup honey
Start by preheating your oven to 400 F. Put your 9-10β cast iron skillet in the oven to warm up while the oven preheats. Combine the dry ingredients in a bowl. Blend in the eggs, milk, butter and lard, leaving the honey for last. Carefully remove your skillet from the oven and pour the batter into your cast iron skillet. Place the skillet back in the oven on the middle rack. Bake the cornbread for about 20 minutes or till a toothpick comes out clean. Let the cornbread rest before serving.

Angela we get ours in a "health food all natural" kind of store in the town about 30 minutes away. You could also probably order online I would thing. You can buy anything online these days!
Yum for sure … We don't have an milled cornmeal so packaged will do .. But one must always bake cornbread in a cast iron skillet for sure ! at least IMHO !LOL then honey is another necessity ! for sure .. Or real Maple syrup .. YUM!!

Cornbread is one of those things I love and rarely make. I'm not sure why. I'll have to Pin this so I remember it next time I'm menu planning! π

The Thanksgiving before last I tried making a great cornbread recipe I found – including homemade creamed corn – it was a disaster! I was embarrassed! I love cornbread…can practically smell it…and I know the fresh milled cornmeal makes a huge difference!
The cornmeal does make a difference but I think it is love thatmakes it rock. LOL
I make mine with sugar (so much better sweet). But adding honey sounds ah-some!
