Extra Crumble Coffee Cake

Who doesn’t love a good coffee cake? I mean seriously, it has got to be one of the best things to stuff in your face first thing in the morning, or heck any time of the day! But it has to be GOOD coffee cake. The stuff you buy at the store in plastic wrappers pales in taste once you have had homemade coffee cake.

And to me, at least, the best part of a good coffee cake is the crumble on top. It never seems like there is enough of it, till now! That’s right, I took crumble to the next level on my Extra Crumble Coffee Cake that I whip up and so can you. Unlike some coffee cake recipes out there, this recipe is amazingly easy to pull off.

Topping
1 cup brown sugar
1/4 cup butter at room temp
1 teaspoon cinnamon
3/4 cup flour (we mill our own wheat flour in our Wonder Mill)

In a small bowl mix ingredients together with a fork till they become crumbly. This is a stickier crumble then some other recipes and when it is time to put it on you cake, you will have to pinch pieces off and drop them on.

Now if you have read any of my other recipes, I am kind of a commando baker. I don’t sift flour or any of that nonsense. I just throw my ingredients into a bowl and go for it. That is what makes this coffee cake so easy! It doesn’t require any of that pampering some other recipes do.

Cake
1 1/2 cup flour
2 1/2 teaspoons baking powder
1/2 teaspoon salt
1 egg (I used a duck egg but you can use a large chicken egg)
3/4 cup sugar
1/3 cup melted butter
1/2 cup milk
1 teaspoon vanilla

Start by throwing all your dry ingredients in a bowl and give it a quick mix with a fork. Next, add in all your wet ingredients. Stir everything up till it is nice and blended. Pour the cake batter into a GREASED and FLOURED pan. I use a 9 inch round cake pan. Next your going to add your crumble topping you made. Remember this is a “thicker” topping then you might have encountered before if you have made coffee cake, but trust me on this one. Pinch off little pieces of topping and get that cake covered. It should look something like this….

Now just pop that bad boy in a 375 degree oven for about 30 minutes. Do the toothpick test to make sure the cake is done. Now I will warn you, with this much topping, your pick may come out “dirty.” Make sure that it is topping, not cake on your toothpick. If it is just topping, your good to go. If you over cook this cake, it will still be moist, but your topping may get a littler firm. So don’t over do it by too much.

Now go grab yourself a cup of coffee and enjoy!
