Peanut Butter Cookie Bars

It is a well know fact that my hubby LOVES peanut butter cookies. My Must Make Peanut Butter Cookies have been a staple around our home for ages. But with two young country kids and spring chores taking up more and more of my time, I don’t always have time to make them for him. I needed something just as good (if not better) that I could do in a fraction of the time. So I headed to the kitchen and started tinkering with recipes and came up with these amazing Peanut Butter Cookie Bars!

Being the commando baker that I am, I of course just throw everything into the bowl and mix it up. I don’t have time for fancy recipes that say dry ingredients here, cream that there, or combine these items separate. No sir, not in my recipes! Just dump everything in the same bowl and mix it up! You get less dishes that way too. *wink*

Ingredients
1 cup peanut butter
1/2 cup softened butter
2/3 cup white sugar
1/2 cup brown sugar
1/2 teaspoon vanilla
1 1/2 cups flour
1 teaspoon baking powder
1/4 teaspoon salt
2 eggs
After I have all the ingredients combined in my mixer, I dump it into a greased 9″x13″ pan. You will notice that this dough is, well, thick! Simply press it into the pan evenly with the palms of your hands. Come on, get in there and have some fun!
I baked these lovely peanut butter cookie bars at 350 degrees for around 30 minutes. Since everyone’s oven bakes a little different, you will know they are down when the sides pull away from the pan and darken.

  1. This is definitely a great recipe. I love peanut butter but have never made cookies with it, let alone cookie bars. This sounds easy to make. Too bad I can't make them for my husband as he doesn't eat peanuts.
