Homemade Butterfinger Bars

Nobody better lay a finger on my homemade butterfinger! Seriously, they might lose a finger or two if they do!

Now I’ll admit, these are not EXACTLY like a real butterfinger, well because trade secrets and all, but these homemade copycat candy bars come pretty dang close! And these bars are super simple to make with just three ingredients!

Ingredients
3 cups of candy corn
1 cup of creamy peanut butter
1 12 oz bag of chocolate chips

These are so super easy to make, you don’t even need your stove, though you can use one if you don’t have a microwave. I like the easy of just popping it in the microwave instead of using a double boiler!

Now your hardest challenge is going to be finding candy corn when it isn’t Halloween, but it is totally doable if you look in your store’s bulk candy bin section. Once you are armed with candy corn, pour 3 cups in a microwave safe bowl and begin warming them up, 30 seconds at a time. Make sure you stir in between warming. Within a few minutes you candy corn will melt down and look something like this….

Now you are going to stir in your cup of peanut butter. If your hubby is like mine, go ahead and heap that cup up! Once the candy corn and peanut butter are well mixed together, pour it into a 9×9″ GREASED pan. If the mix stiffens up at all during mixing or pouring, just pop it back in the microwave for 30 more seconds to loosen it up.

Once the candy is in the pan, pop it in the fridge till it set up so you can cut it into the bar size you want. I went with smaller, two bite size bars as I like to limit the country kids’ sugar intake. They bounce off the walls enough without added sugar! And don’t worry if your bars are not all uniform, or if a piece crumbles of the end….. those are the cook’s piece to nibble and keep them fueled while making them. *wink*

Once you have your bars cut, it is time to put the chocolate chips in a microwave safe bowl and get them melted down. As with the candy corn, work in a 30 seconds in the microwave, then stir pattern. Once the chocolate is melted, it is time to get dipping. I just used a fork to pluck mine back out of the chocolate. If your chocolate starts to firm up, just pop it back in the microwave and keep going.

Once the bars are dipped in chocolate, place them on wax paper to set up. Placing the tray in the fridge will help the chocolate firm up faster if you are having a hard time waiting to take a taste! Once the homemade Butterfingers are firmed up, store them in an air tight container in the fridge. I would suggest way in the back, behind vegetables, so the kids will never find them!!! But that’s just me *wink*
