
Do you ever walk through the grocery store baking aisle without a plan? You know you want to make something and then *BAM* you spot something that sends you on a magical journey? Yeah, this is one of those recipes!
Back around Christmas I spoted some Andes Creme de Menthe chips in the baking aisle and started to drool. I wasn’t sure what I would make with them, but I knew they had to come home with me. When I showed them to my hubby, he started drooling and said, “Oh I bet they would be good in a chocolate cookie!”
So into the kitchen I went, armed with chips and cocoa powder. What came out? A new family favorite in the cookie department! These were such a big hit that I don’t know who fought over them more, the kids, or hubby and I!
So how does one make these astonishing delights? It is SO super easy! First preheat your oven to 350 degrees. Next, grab your stand mixer and the ingredients listed below on the recipe card. Go get them, I’ll wait….

Just throw everything but the Creme de Menthe chips into your mixer. Turn that bad boy on and stand back and watch. Once all of the ingredients are well incorporated, throw the chips in. The dough will be a little tacky, don’t worry, and don’t add more flour.

Because the dough is a little tacky, I opted to not use a scoop to make these. Instead I went with a simple table type spoon. You know the ones, the kind you eat your cereal with. I did my best to keep them all a consistent size so they would bake evenly. Plop your scooped dough onto a non-stick mat or a lightly greased cookie sheet.
Once your pans are loaded and ready to go, slide them into you preheated 350 degree oven. These cookies only take 8-11 minutes to cook!
