Naughty or Nice Oatmeal Zucchini Cookies

This time of year many folks are being overrun with zucchini. Whether it be from their own garden or from some anonymous person leaving a bag of it on their front porch. Come on, you know who you are…. I’m just saying, friends don’t leave friends zucchini on the porch! Nor do you slip it into people’s cars because they were dumb enough to leave it unlocked during the height of zucchini harvesting.

If you do find yourself hip deep in the green things, I have another way for you to use them up! Naught or Nice Oatmeal Zucchini Cookies! Why are they naughty or nice? Because if you don’t add the frosting to them, they are yummy and pretty good for you. If you do add the frosting, they will be sweeter and may add a few pounds to those hips that are surrounded by zucchini. Either way you go, these things are good!

Ingredients


1 1/2 cups of flour
1 cup sugar
1/4 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon nutmeg
3/4 teaspoon cinnamon
3/4 cup softened butter
1 egg
1 cup grated zucchini
2 cups quick oats

Begin by adding the flour, sugar, soda, salt, nutmeg and cinnamon. Make sure it is all blended together before adding in the butter and egg. Now I freeze my zucchini (so I have some for the winter months) and I use the liquid in the bag too. If you use frozen zucchini do not toss out the liquid, or your cookies may come out too dry. These cookies should have a cake like sponginess to them. Last add in your quick oats and mix it all up.

Preheat your oven to 400 degrees and start dropping your dough by the spoonful onto a GREASED cookie sheet. The cookies will bake for around 10 minutes. This recipe makes around 3 dozen cookies, depending on the size you make them.

Now you could stop here….. trust me, these are delisious as they are. But if you really want to kick it to the next level (and make your children bounce off the walls) add a little homemade frosting to them.

Frosting
3 tablespoons of softened butter
1 table spoon of milk
1/2 teaspoon of vanilla
1 cup powdered sugar (may need just a tad more to make the thickness to your liking)

This should give you just enough frosting to give each cookie a dab of love! And like I said before, Naughty or Nice, these oatmeal zucchini cookies will make your taste buds love you! Your children will cheer. Heck, your loved ones might even kneel down and sing your praises!

  1. These look great! I'll be pinning this recipe to try next year. Sadly, though I froze tons of zucchini in pre-portioned sizes, I have none left from this season. Not to whine or anything, but it was due to a freak accident that involved someone not shutting the outside freezer door properly during the month of July in S. Ga. *sigh*

  2. ooooooooooooo Really? Zucchini? Woo Hoo I think I*'ll make these instead of bread… hmmm maybe I'll make both! hehehe I have a veggie garden, and all I grew was zucchini, cucumbers and tomatoes both yellow and red. mmmm I'm going to pin this one for sure. Thank you for sharing.

They must not live in New Mexico, because in order for me to get any zucchini I have to beg (and I do mean beg) for some from my mom's garden – it's been a meager harvest this year.   4. I am adding this recipe to my collection because it seems so delicious and easy. My mother used to freeze her garden zucchini is pre-measured freezer bags, labeled for zucchini bread or chocolate zucchini. So good! Nannette.

    1. My boys love baked good with zucchini in them… actually beg for em! And they know the zucchini is in em. I know, they are normal! LOL
