Whenever we have bananas that get too ripe, everyone at our house starts begging for banana bread. Now, don’t get me wrong, I love banana bread as much as the next person, but there had to be something else I could do with my over ripe bananas. So this time, I switched it up on them and came up with a banana and walnut cake that totally hits the spot!
With some simple ingredients from your pantry, you too can whip up this cake that will make you a culinary rock star with your family. Easy to make, simple ingredients and best of all, it smells so good while it bakes, they will be drooling before it hits the table!
While your ingredients are blending, chop up some walnuts. You can use English or Black walnuts. Black walnuts have a stronger taste than the English store bought walnuts, so depending on your taste, if you use black walnuts, you will want to use a little less than the listed 1/2 cup as to not over power your banana.
Once you have your walnuts chopped, drop them and the banana into the mixer. While they are blending into the batter, grease a 9″ x 9″ cake pan. Pour your batter into the pan and bake at 350 degrees for around 50-55 minutes. You will know your cake is done when you test it with a toothpick which will come out clean if the cake is done.
Once your cake is done baking and cooled, it is time to make some amazing homemade peanut butter frosting! Head back to your pantry and grab…..
This frosting sets up rather quickly, so get it on the cake as soon as you turn the mixer off. This will give you time to spread it and make it look all pretty. Now you could just leave the cake like this, but I wanted to add a little element of drama (like one of those fancy food network stars) so I chopped a few more walnuts and sprinkled them on top.
So how yummy is this banana and walnut cake with peanut butter frosting? Let’s just say when I served it, at least one person full face, licked the plate! Not wiped with a finger, oh no, but face up to the plate, tongue out, licking. I’d say it’s pretty yummy!
