This is the easiest 30 minute lasagna you will ever make! And you can make it in a single pot! There is no boiling of the pasta, no layering of ingredients, none of those labor intensive activities. I kid you not, the pasta gets cooked right in the pan! And the taste? It is lasagna, baby, how could you go wrong!
With homeschooling and my hands full of country kids, it is sometimes hard to cook a decent meal, or even get dinner going some days. With this recipe I have no excuses as it only takes 30 minutes to whip up and I can put the country kids on tasks like shredding cheese or grabbing me spices to help me keep them busy and get the meal done.
And the fact this whole meal is made in one pot…. clean up is a breeze!
Start by putting a teaspoon of olive oil in your pan and warming it up to medium high. When the pan is warmed up, add Italian sausage and brown. Make sure you crumble the sausage as it cooks. The amount of sausage you use is going to depend on how much meat you want in your meal. My hubby LOVES meat. I, on the other hand, like minimal amounts. For this recipe I used a pound. After the sausage is browned, drain the excess fat.
Next stir in the diced tomatoes, tomato sauce, oregano, basil, garlic powder and red pepper flakes and season with salt and pepper to taste. You are going to simmer these all together for a couple minutes to get the flavors going in your meat.
Next add in 2 cups of water and your farfalle pasta. Yes, farfalle is just the Italian word for the bow-tie pasta you see in the stores. In Italian farfalle means butterflies, which is much nicer then bow-tie, if you ask me!
Bring the ingredients to a boil and cover. Reduce the heat and let it simmer until the pasta is cooked through, about 15 minutes. Yes, the pasta really does cook. I was skeptical the first time I cooked pasta this way, but it really does work!
When the pasta is done, remove the pot from the heat and stir in mozzarella and Parmesan until well combined. Next top with dollops of ricotta and cover. Let the pot sit until it is heated through, which will take about 4 minutes. Now, if you really want to keep the mess down, just hand out forks and make everyone eat out of the pan! LOL
This dish is seriously some good eats. My picky kids ask for it time and again, and the left overs warm up great. So what are you waiting for?!?!? Get cookin!

Have you tried having your kids start helping you in the kitchen? Kids can do all kinds of things to help with some training. I raised 3 working full time and they set the table, chopped veggies, made salads, cleaned up, etc. with supervision. It all helps!
The littlest loves to help but the oldest just says "I don't like ___fill in what ever we are having___ so why do I need to know how to cook it!?!?" *smacks forehead*

Sounds really good! I just made traditional lasagna. We were pigs and ate the entire pan in one meal :P. I'll have to give this a try next time since the grease dripped down into my oven and made my smoke detectors go off for half an hour haha. Thanks for sharing with us at the homestead blog hop!
