Mexican Tater Tot Casserole

Do you ever get in a dinner rut? You know, the same things keep showing up every week. I am so tired of having the same old, same old, so we have been on a mission to come up with new ideas for dinner time. This week’s recipe is Mexican Tater Tot Casserole.

Now there are many recipes out there for Mexican Tater Tot Casserole, many of which have things in it the country kids would turn their noses up at before even taking a bite. So after much consideration, I came up with a basic recipe that you can totally add other ingredients to, but you don’t need to, because it tastes that good! Sometimes simple IS better!

Start by browning a pound of ground beef, draining off the oil and adding your favorite taco seasoning mix to it. Just imagine your making tacos. Once the meat is ready, spray a casserole dish with cooking spray and dump the meat in the bottom, spreading it out evenly. On top of that pour a jar of queso. You can find queso (cheese) in the international aisle or over by the chips. For my wimpy children, we used a mild queso.

Once you gently spread the quaso over the taco meat, add a package of tater tots over top (still frozen.) Simply pop the dish in a 400 degree oven for 40 minutes. When the casserole is done, sprinkle with some shredded Colby Jack and slide it back in for another 5 minutes so the cheese can melt.


Just look at all that cheesy goodness!


And trust me, a pound of taco meat is just the right amount to get some in every bite!



My hubby, who likes his food a little spicier then the country kids, topped his casserole with sour cream and some jalapeno peppers.

You will want to serve this dish straight out of the oven. While the kiddos might need to blow on it a tad, it is so good piping hot! I would not recommend saving left overs on this one (not that we had any!) as it might get soggy over night in the fridge.

You can also play with this recipe to make it your own! If your family likes peppers, onions, corn, whatever, go ahead and throw it in under the tater tots! This dish is so easy and versatile, you can’t go wrong. And since everyone had seconds in our family, I would say it was a hit and will be making future appearances on our dinner table!   1. This sounded so yummy that I fixed it last night for dinner. I didn't have queso on hand so I used a jar of cheese sauce mixed with salsa. Delish!
