Lemon Crinkle Cookie Recipe

Around here, our cookies tend to be mild manner. You know, your run of the mill peanut butter, chocolate chip, and sugar. My family doesn’t tend to beg for fruity type cookies.

Recently though, the littlest country kid has taken to lemons like white on rice. He goes so far as to suck lemons! I find this disturbing, personally, but to each their own, right?

So I decided to come up with a cookie just for him and his love of lemons. I wanted them strong enough to appeal to his pallet but not too lemony so that everyone else would turn their noses up at them. Thus was born my Lemon Crinkle Cookie recipe.

It has just enough lemon flavor and sweetness to make anyone drool. And they are so easy to make! After you preheat the oven to 350 degrees, you simply throw all the ingredients (listed at the bottom of this post on a recipe card – minus the powdered sugar) into a mixer. Once they are all well blended together, it is time to shape them and get them in the oven. I use a regular table spoon to scoop uniform sized bits of dough, which I then roll between my palms to make a nice little ball.

Place powdered sugar in a wide bowl so you can toss your dough balls in. Simply drop the dough in and shake the container or use your fingers to roll it around so that the dough is covered in powdered sugar.

Place your sugar covered dough balls about 2 inches apart on your prepared baking pan. You can either lightly spray the pan or use a nonstick mat like I do. Place your pan in the oven for around 10-12 minutes to bake.

Don’t worry if the cookies still have a light color to them, they’re supposed to! Let the cookies cool on the baking sheet for a few minutes before transferring them to a cooling rake. You will want to store these delicious bites of lemony goodness in an air tight container. If your me, that container needs to be put up out of the littlest country kids reach because he L-O-V-E-S them! Like inhale and gone!
