Cherry Sugar Cookie Cobbler

A few weeks back I was grocery shopping, and of course I had to hit the baking aisle for supplies. As I was cruising along I saw cherry pie filing…. Now normally, I make my own, but we have been out of cherries for some time, and seeing the can made me long for a cherry pie, so I grabbed a can and tossed it in my cart.

Weeks passed and every time I thought about making a cherry pie I didn’t want to have to make a crust, so the can sat on the shelf. Normally I don’t mind cooking from scratch, but pie crusts have never been my strong suit. I finally got fed up and wanted something with cherries in it,
and since fruit pie crust is normally a little sweeter, I thought “why not use a cookie dough for the crust!?!?!” So that is exactly what I did and it turned out awesome! Thus was born the Cherry Sugar Cookie Cobbler!

Cookie Cobbler Ingredients
2 eggs
1 1/2 cup sugar
 3 1/2 cups flour
1 teaspoon vanilla
3/4 teaspoon salt
1 cup melted butter
1 teaspoon baking soda
3/4 teaspoon baking powder
1 can of cherry pie filling

Mix all of your ingredients together to form your sugar cookie dough. Place 2/3 of the dough in the bottom of a lightly greased 9″x13″ pan and press it flat to make the bottom of your cobbler. Next add your canned (or fresh, if you have it) cherry pie filling. You are going to evenly spreed the filling over your cookie crust.

Next, take the remain 1/3 of the cookie dough and crumble pieces over the top of the pie filling. The dough will be a bit tacky, so just pull off small pieces and drop them on.

Now pop it in a 375 degree oven for around 25 minutes. The top will get that golden brown when it is finished. Let the Cherry Sugar Cookie Cobbler cool slightly before serving with a bit of vanilla ice cream on top. I promise you, this desert is HEAVENLY!! Not only will you be a rock star in your own home, but if you take this to a gathering…. people will rave! *wink*

Just made a cherry pie this week and I have three cans of pie filling…two went into the pie and I think that this post must have known that I was looking for another purpose for the can in the cupboard other then eating it out out of the can 🙂 This looks fabulous and so much better than making that crust!
